Sausage and Potato Skillet

Cooking from scratch isn't always fast and easy, but that doesn't mean it's never fast and easy. This is a very satisfying, very delicious, very simple meal that doesn't dirty a lot of dishes and is sure to please. It comes together quickly and is perfect for those nights you don't have a lot of time.
The best part? It's even easier if you use leftover baked potatoes.
It's pretty tasty on it's own, but if you serve it with some sauerkraut, it is basically perfect. Definitely on the top of my list of comfort foods.
Sausage and Potato Skillet
Ingredients-

Kielbasa or sausage
5-6 small potatoes or 3-4 large ones
2 cups of washed spinach
Fat of choice (my favorite to use here is saved bacon grease)
Salt and pepper
Directions-
Heat your skillet over medium-low heat until warm.
Add some fat (enough to cover the entire pan) and allow to heat through.
Cut your potatoes into bite sized pieces.
Add the potatoes to the hot pan and cover with the lid until tender, about 10-20 minutes, depending on the size. Do not stir them until they have had time to develop a bit of a golden crust. This helps to avoid having them stick to the pan.
Meanwhile, cut kielbasa or sausage into bite size pieces.
Once potatoes are tender, remove the lid.
Add the sausage.
Meanwhile, tear or cut spinach into smaller pieces.
Fry until browned and crispy. Add salt and pepper to taste.
Add the spinach and cook until just wilted, another 3-5 minutes.
Adjust seasoning as needed.
Notes-
This is a GREAT way to use up leftover baked potatoes for an even faster version. Simply skip the step where you cook the potatoes covered (since they are already tender!) and add cubed baked potato to a pan with hot fat. Don't forget to let it sit, undisturbed, for awhile before you stir them to allow them to develop a nice crust and prevent sticking to the pan!
